When I owned my cake shop we would sell so many slices of banana bread through the week. They are quick and simple to make and smell delicious baking!
At home if we have bananas going brown this is the perfect way to use them up and stop waste too. I've adapted the shops recipe and put chocolate chips in this loaf.
100g Milk Chocolate Chips
270g Soft Light Brown Sugar
250g Peeled Browning Bananas
280g Plain Flour
2 Free Range Eggs
1 Teaspoon Baking Powder
1 Teaspoon Cinnamon
1 Teaspoon Ground Ginger
140g Unsalted Butter
1* Preheat the oven to 170oC
2* Put the sugar and butter into a mixer and blend until light and fluffy
3* Beat in the mashed bananas
4* Add the flour, baking powder, cinnamon and ginger
5* Add the eggs and then the chocolate chips
6* Pour the mixture into a greaseproof lined tin. I use a bread loaf tin
7* Pop into the oven for about 60 minutes or until the cake is golden brown and a knife comes out clean when inserted into the centre.
