Cranberry and white chocolate cookies are delicious and these ones will be gone before they have even cooled down.
135 g / 5oz Butter
80g / 3oz Caster Sugar
80g / 3oz Light Brown Sugar
1/2 tsp Vanilla Extract
190g / 7oz Plain Flour
1/4 Tsp Ground Cinnamon
1/2 Tsp Bicarb of Soda
100g / 3oz Dried Cranberries
60g /2oz White Chocolate
1* Preheat oven to 170oc and line two tins with greaseproof paper
2* Using a mixer cream together the butter and both sugars, add the egg and vanilla and mix well.
3* Next add the flour, bicarb and cinnamon. Mix well.
4* By now the mixute will resemble dough, at this point add chocolate and cranberry.
5* break off pieces of the dough and pat into biscuit shapes and pop onto the tray. .... space them out over both trays so that they can spread in the oven.
6* Bake for 8-10 minutes
7* Pop onto a cooling rack.
These cookies are perfect as little gifts for friends, family and neighbours. Pop them into cellophane wrap with ribbon or little gift boxes as I have here.
